There are many ways to increase the intake of vegetables. E.g. here we reduced the minced meat 50% and added grated carrots and zuchinnis instead. In addition we place greens on the top (chard, spinach or like here, black cabbage). It cooks with the steam, so we have one main dish and one side dish with additional veggies in the same pot. Very practical and delicious.
